Green Eyed loves vegetables

It’s about 10 PM here in California and that’s the perfect time to make vegetables and protein nom nom nom. I’m making one of my favorites: roasted swiss chard with red onions and feta. I love chard especially the rainbow variety and when you bake it with onions and feta with just a lil olive oil, salt, and pepper it is phenomenal. The chard leaves get crispy almost like chips and it has so much flavor! I need to get more simple tasty veggie recipes. Right now I have roasted chard, mashed cauliflower that you mix with mayo, mustard and parmesan cheese and oven bake, roasted brussel sprouts oven baked with olive oil and spices, and zuchini sauted on the stove with olive oil and spices and then add some canned zesty tomatoes. I love eating fresh food. It is a whole experience of the senses. Look at the bright colors of the veggies, smell them roasting, taste the crispness mmmm.
I love my new home that I am renting, but my goal is to buy a home hopefully with enough land to do some of my own gardening and have chickens too. I hope to do this within the next two years. In order to make that happen I need to start putting more money away in savings. I love eating and trying new food and I was often eating out way too much and that’s a quick way to cut back on spending is by making more meals at home. So that’s what I’m doing and I’m trying to plan out what I will eat for the week so I have enough food and I can’t make the excuse of “oh there’s nothing in the fridge I have to eat out”. I think one meal out a week will be enough to still try new foods and reward myself while keeping on track for bigger and better things.
